Artichoke Pizza

 

This delectable pizza is easy to make and nutritious, too! Artichoke, the main event, is an excellent low- calorie source of fiber and vitamin C, and a good source of folate and magnesium. Artichokes are also full of powerful disease-fighting antioxidants.

Ingredients:

  • Nonstick cooking spray
  • 1 cup thinly sliced mushrooms
  • ½ cup thinly sliced onion
  • ½ cup thinly sliced artichoke hearts (not marinated in oil), drained
  • 1 (6-inch) prepared pizza crust
  • ½ cup shredded reduced-fat Swiss cheese or reduced-fat Italian blend cheese

Directions:

  • Preheat oven to 450°F. Coat small skillet with nonstick cooking spray. Cook mushrooms and onion over low heat about 10 minutes until soft but not browned. Spread on pizza crust.
  • Top pizza with artichoke hearts and cheese. Bake 8 to 10 minutes or until cheese is melted. Makes 2 servings.
