This delectable pizza is easy to make and nutritious, too! Artichoke, the main event, is an excellent low- calorie source of fiber and vitamin C, and a good source of folate and magnesium. Artichokes are also full of powerful disease-fighting antioxidants.
Ingredients:
- Nonstick cooking spray
- 1 cup thinly sliced mushrooms
- ½ cup thinly sliced onion
- ½ cup thinly sliced artichoke hearts (not marinated in oil), drained
- 1 (6-inch) prepared pizza crust
- ½ cup shredded reduced-fat Swiss cheese or reduced-fat Italian blend cheese
Directions:
- Preheat oven to 450°F. Coat small skillet with nonstick cooking spray. Cook mushrooms and onion over low heat about 10 minutes until soft but not browned. Spread on pizza crust.
- Top pizza with artichoke hearts and cheese. Bake 8 to 10 minutes or until cheese is melted. Makes 2 servings.
