Banana nut bread is a great side dish for any diabetes meal. Bake this banana nut bread in a bread pan or for something different, use a muffin tin.
Ingredients:
- 1 c. flour
- 1 tsp. soda
- 1 tsp. baking powder
- 1/4 tsp. salt
- 7 pkts. Sweet and Low
- 1/4 c. butter, softened
- 1/2 tsp. vanilla
- 2 egg yolks, beaten
- 1/4 c. pecans
- 3 bananas, mashed
- 2 egg whites, beaten stiff
Directions:
- Mix together butter, vanilla, egg yolks and bananas.
- Add flour, soda, baking powder, salt, Sweet and Low and pecans.
- Fold in stiff egg whites last, bake in loaf pan at 350 degrees until done. Apples, raisins or other fruit may be added.
