Banana Nut Bread

 

Banana nut bread is a great side dish for any diabetes meal. Bake this banana nut bread in a bread pan or for something different, use a muffin tin.

Ingredients:

  • 1 c. flour
  • 1 tsp. soda
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 7 pkts. Sweet and Low
  • 1/4 c. butter, softened
  • 1/2 tsp. vanilla
  • 2 egg yolks, beaten
  • 1/4 c. pecans
  • 3 bananas, mashed
  • 2 egg whites, beaten stiff

Directions:

  1. Mix together butter, vanilla, egg yolks and bananas.
  2. Add flour, soda, baking powder, salt, Sweet and Low and pecans.
  3. Fold in stiff egg whites last, bake in loaf pan at 350 degrees until done. Apples, raisins or other fruit may be added.
